If you’re into fast, healthy, ridiculously tasty snacks, these two avocado toast variations are going to become your new go‑to. They’re the kind of recipes you make once and then suddenly you’re eating them three times a week because they’re that easy and that good.
One version is super refreshing with cucumber and lots of lemon — bright, crunchy, and addictive. The second is a more savory, Mediterranean‑inspired combo with feta, tomatoes, and herbs. Both take just a few minutes, use simple ingredients, and taste like something you’d get at a café.
If you love avocado toast, healthy breakfasts, or quick vegetarian meals, you’re in the right place.
You’ll Need
Jalapeño cheddar bread with roasted peppers (2 slices, toasted until crunchy)
Feta cheese
Cucumber – (1)
Avocados – depending on how much you want
Tomato – (1)
Cilantro
Parsley – Italian parsley works too
Salt & black pepper
Lemon juice
Everything seasoning (garlic, onion, sesame seeds, poppy seeds)
Baked pita chips – optional, for the side
Prepping the base and toast:
Place the toast bread in the oven to crisp up.
Chop the cucumber and add plenty of lemon juice so it absorbs the flavor.
Crumble the cheese into small pieces.
Chop the tomatoes.
Cut the avocados.
Mix and mash the avocado with pepper, lemon, and salt.
Chop the cilantro and parsley lightly (not too fine).
Take the toasted bread out of the oven.
Variation 1: Refreshing Cucumber and Lemon Avocado Toast

Variation 2: Mediterranean Feta and Tomato

Topping:
- Add the crumbled cheese.
- Add the chopped tomatoes.
Finish:
- Add the herbs in the middle.
- Sprinkle pepper and salt.
Serve & Enjoy!
✔ Pick ripe avocados
Soft but not mushy. If they’re firm, leave them next to a banana for a day.
✔ Don’t skip the lemon
It boosts flavor and keeps the avocado from browning.
✔ Texture matters
Mash the avocado roughly — a little chunkiness makes it taste fresher.
✔ Toast your bread well
A crisp base prevents sogginess once you add the toppings.
✔ Add herbs generously
Cilantro and parsley add freshness and make the toast feel more “complete.”
